Our outpatient nutrition services at Mountain View Hospital are designed to help you achieve your health goals through personalized nutrition support. Our registered dietitian will work with you to manage chronic health conditions or enhance your overall well-being.

Katie Hickok, MS, RD, CDCES

Meet our Registered Dietitian

Katie Hickok, a registered dietitian and certified diabetes educator, is dedicated to supporting you on your health journey with personalized guidance. She understands that a one-size-fits-all approach doesn’t work, which is why she tailors nutrition strategies to fit your unique needs. Katie aims to clarify any confusion and help you understand your condition better.

You can meet with Katie in person in Idaho Falls, Blackfoot, and Pocatello, or opt for a telehealth visit if you live in a rural area. She is passionate about helping individuals manage diabetes, gastrointestinal issues, food allergies, weight concerns, and more. She has worked in hospitals, clinics, and virtual settings for over six years and believes nearly everyone could benefit from meeting with a dietitian at least once a year. Sometimes a small tweak in food choices can make an enormous impact.

Diabetes Distress

Diabetes distress refers to the emotional burden and stress related to managing diabetes, which can affect up to 36% of people living with diabetes. Signs include:

  • feeling overwhelmed by the daily demands of diabetes
  • frustration with glucose fluctuations
  • burnout from self-care routines
  • fear of complications

To address diabetes distress, it’s important to identify sources of stress, practice self-care, and seek social or professional support. Techniques such as mindfulness, setting realistic goals, and connecting with diabetes support groups can help. If distress persists, working with a mental health professional familiar with chronic illness management may be beneficial.

Health Insurance Coverage

Insurance coverage for medical nutrition therapy can vary depending on your plan. Many private insurance, Medicare, and Medicaid plans include nutrition counseling for chronic disease prevention. This means you might receive these services at no cost, depending on your specific plan.

Our outpatient dietitian is in-network with most major insurance providers.

The initial appointments are typically 1-hour and follow-up visits range from 30-45 minutes.

I initially went to see a registered dietitian for help with weight loss, but during our discussion, I mentioned that I had been struggling with severe bowel issues for the past six months. I was experiencing days of constipation followed by diarrhea, which made me feel awful and disrupted my life.

The dietitian explained that before starting a weight loss plan, it was important to address my gastrointestinal problems. She asked me about my typical diet, and I described what I usually ate. Upon further discussion, I shared that I had been eating a raw onion daily for about six months because I’d read online about the health benefits of raw onion.

The dietitian introduced me to the concept of FODMAPs and explained how certain foods like onions could contribute to digestive issues. After I stopped eating onions, my gastrointestinal problems greatly improved, and I felt much better. With that resolved, I was finally able to focus on starting my weight loss journey."

You wouldn’t think I had diabetes and non-alcoholic fatty liver disease by looking at me, but I do. My blood sugar levels were consistently over 250, and I was always exhausted. Even though I wasn’t overweight, and my weight was stable, I never paid much attention to my diet. I got away with it, until I didn’t.

When my doctor prescribed three diabetes medications and showed genuine concern for my health, I realized it was time to make a change. I started working with a dietitian, who helped me make small adjustments to my diet and gradually introduced low-impact exercises.

The dietitian was incredibly patient, kind, and understanding throughout the process. Now, my blood sugar levels are in the 130s, and I’m down to just one medication! While I still have more progress to make, I’m confident I can achieve my goals with the support and guidance I’ve received."

I work a full-time, mentally demanding job, which led me to eat out frequently and often go hours between meals, sometimes having just one large meal a day. This lifestyle contributed to various health issues, including being overweight, prediabetes, and high blood pressure. I had always blamed my high blood pressure on the stress of my job, but I learned from my healthcare team that it was only part of the problem.

I realized I wasn’t taking good care of my body, even though I was still getting by. I never knew what it felt like to truly feel great, while others around me seemed to be enjoying their weekends and having fun, while I only wanted to rest.

One day, I knew something had to change, and that I needed to change. I don’t remember what clicked, but enough was enough. I decided to act and called my provider for a referral to see a dietitian. Since then, things have been looking up!"
